Ingredients
1 cup SR Flour
1 cup Coconut
1/4 cup Caster Sugar
3/4 - 1 cup Milk
3/4 cup Choc Chips
Or cranberries work well too .. :0) (especially when making for the children)
Method
1. Grease base and sides of a 19cm x 29cm lamington pan. Line base with paper, then grease paper
2. Combine all ingredients in a large bowl, and mix well. Spread mixture into prepared pan.
3. Bake at 180 degrees for approximately 35 mins or until cooked when tested. Allow to cool for 10mins before turning out on wire rack
4. Cool completely before cutting into squares.

From Cathy's kitchen: Mum's Chocolate Cake
Mix together in mixmaster:
125g butter
1 C sugar
1 egg
1/2 C cocoa
1 1/2C SRF
1/2 tsp bicarb soda
1 tsp baking powder
1/2 tsp salt
1/2 C milk
Then slowly add these (or they'll splash)
1 tsp vanilla
1/2 C boiling water
Beat on high 3 minutes. Put into cake tin (lined / greased) or patty tins (greased).
Bake in moderate oven until inserted skewer comes out clean.
Cool in tins 10 minutes, then on a rack until cold.
Variations:
add 1/4 C freshly squeezed orange juice and reduce milk to 1/3 C
and/or
add 1 tsp finely grated and chopped orange zest
or ice with white peppermint icing
Freezes well - iced or uniced
